I think this belongs in the D/P section, but anyway, did it happen to look like this?

And did it shine when you encountered it?

Heatran has red eyes, so yes, it is Shiny. Congrats on getting a shiny legend. :D

So lucky.
When you see a legendary, turn your game off, will it definately be the same type (shiny, non shiny) and stuck like that?

No, a Pokemon's code is only set once you catch it. Except for Eggs, in which case I think the code is set after you take the Egg and not after it hatches. So if you want a shiny Legend, the best thing is to save and then start the battle. If it's not shiny, turn off the game, turn it back on, and start the battle again. You can do the same thing for the Starters, if you want a shiny one. But, and I'm sure you know this, shiny codes are extremely rare. You could play the game for hundreds of hours and not see a single shiny Mon. So, if you want a shiny Legend, be prepared for hours of work, which may end up being for nothing.

I suppose I can call myself kind of experienced at chaining, but I'm not sure what you're doing wrong. And Bidoof isn't necessarily the easiest to catch. Here's a pic-

hope this helps
