not sure what this question has anything to do with the thing you quoted on, but anyways...

1. yes you can still use them. Saying that you can't use vitamins after you've gained EV's, is the same as saying you can't using vitamins because you've battled other pokemon before.

2. Yes, you can add up to 10 of each vitamin to a single pokemon.

Note, however, that vitamins can't be used if it would bring the Pokémon's EVs to above 100. So in this case, you could only use 5 Proteins, because the sixth one would give the Pokémon 102 attack EVs, which it can't.

I've heard of it before when I first learned about EVs, and when I tried to overfeed an already-trained poke, it happened, so I confirmed it.

Try PI Carlos on Route 214. He has a Goldeen and two Seaking. That's 5 attack EVs. With Pokérus, 10; with Power Bracer, 19; and with both, 38.

Well on route 203, there a Lass trainer with a level 38 Staraptor and a level 38 Bibarrel, which gives you 5 EV total. However, I think it's better to fight wild pokemon cause they occur more often and you'll gain EV's faster.

The location of the trainer was from spr bhav's EV guide, so if you want a good EV training spot, refer to his guide, but if you just want to learn about EV's, use my guide, BECAUSE MY GUIDE IS BETTER!!!

I can say that because spr bhav never comes online anymore . Otherwise, that's just ego.
